Crock Pot Chicken Gyro (21 day fix approved)


Crock Pot Chicken Gyro

  • 21 Day Fix: 1 Green, 1.25 Red, 1 Yellow, 1 tsp


    Ingredients:
    20 oz boneless, skinless chicken breasts
    3 cloves garlic, minced
    1/4 cup fresh lemon juice
    1 onion, diced
    1/4 cup water
    1 tablespoon olive oil
    2 Tablespoons red wine vinegar
    1 teaspoon oregano
    1/4 teaspoon allspice
    1 teaspoon lemon pepper ( or if you want to do it how I did because you don’t have lemon pepper, its 1/2 teaspoon lemon peel, 1/2 teaspoon fresh black pepper, & a dash of fresh sea salt)
    2 1/2 pitas
    1 cucumber
    1-2 tomatoes
    Shredded lettuce
    Sliced onions (Optional, I didn’t use extra onion)
    1/2 cup Tzatziki Sauce
    Directions:
    1. Spray crock pot with non-stick cooking spray.
    2. Place chicken breasts inside slow cooker.
    3. Mix garlic, fresh lemon juice, onions, water, olive oil, red wine vinegar, oregano, allspice and  lemon pepper together in a bowl and pour over chicken breasts.
    4. Cook on HIGH for 3-4 hours or LOW 6-8 hours.
    5. Shred chicken
    6. Serve 1/2 cup of chicken with pita bread (1 cut mine to be open, you can do that or use the pocket), sliced tomatoes, sliced onions, sliced cucumbers, lettuce, and 1/2 cup Tzatziki Sauce, see recipe below

    Tzatziki Sauce

    Ingredients:
    1 cups nonfat plain Greek yogurt
    1/4 tsp. sea salt
    a dash ground pepper
    1 cloves garlic, finely chopped
    1 small cucumbers, peeled, finely chopped
    1 Tbsp. finely chopped fresh dill
    1/2 Tbsp. finely chopped fresh mint leaves
    Directions:
    1. Combine yogurt, salt, and pepper in a medium bowl; mix well.
    2. Add garlic, cucumbers, dill, and mint; mix well. Chill for 1 hour.
    **You can also serve with fresh vegetables or cooked fresh artichoke for dipping.
