Ingredients
2 1/2 cups oats
2 medium bananas
1 tsp vanilla extract
1 tbs honey ( I used 2 packets of stevia ( dextrose free)
2 eggs
2 cups of almond milk
1 tsp baking powder
6 scoops of chocolate whey protein( I use a 0 carb low sugar protein powder)
1/2 cup of blueberries ( or choice of fruit)
cinnamon
Preparation:
Preheat your oven to 350. Use a 12-muffin pan and spray the cups well with non-stick spray.
Combine the wet and dry ingredients in separate bowls. Add the dry ingredients to the wet ingredients and then add the almond milk. Add mixture to the muffin cups, top evenly with fresh blueberries and bake for about 25-minutes or until a toothpick inserted in the center of a muffin comes out fairly clean.
2 muffins = 1 red, 1 yellow, 1 purple

spray muffin tins well
don't over cook! with the whey protein it easy to dry these babies out fast if your not careful. Check at 15 minutes!
I like to eat with 1/2 tsp of honey and 1 tsp of coconut oil
I store in fridge to eat through the week
